Coconut Cake Recipe

Do you like coconut? Well, its amazing how some people absolutely love it while some can't stand it.



I love coconut! and I adore coconut cake. It's also a popular cake amongst some of my customers.



I don't know what my son has against the word coconut. He claims not to like coconut but every time I make it he can't stop eating it. And yet he says - mama this is not coconut cake this is vanilla cake but smells different....kids... love them.

Dog Sugar Cookies / Cookie pops

Butter Pound Cake - Perfect for carving.

Quite a few people have an image of a dry cake when you say Pound Cake.  But that is not necessarily true.

If made correctly this can be a very delicious cake and absolutely easy to make.

As you can see in the pictures below I'm not using my electric mixer too, my 4 1/2 year old son is mixing this cake in a bowl. It's that easy.  Oh well, he thinks he's making the cake (with a little help from me).



I have used this recipe not only for my sculpted cakes but also for wedding cakes. It is really a very light in texture but still good for carving.



This is very similar to a Sponge Cake but just a bit more dense which makes it easier to carve as well as perfect for tiered cakes.

Since this is a butter cake, the most important ingredient is obviously the 'butter' so its best to use a good quality butter.



This recipe will make one 8" layer cake about 2 inches high.

How to roll and cut sugar cookies & Cookie Pops

I know there are a lot of fancy tools to roll out sugar cookies. I have received a couple of emails asking me how I roll my sugar cookies to see if there is some tool  I recommend.



I do not have any of these fancy tools.  I just follow a very simple method that works for me. I'm happy to share it with you.

Strawberry Jello Cake

I've been wanting to share this recipe with you for a while now. I call it the kids cake. It's quite popular with my kiddy customers especially my sons friends. My son just adores it.



Any kid  or rather any person that loves Jelly and strawberries will love this cake, me too.



This is a very delicate cake with a soft crumb so it's best to bake it in two pans rather than try to torte one cake later. If you do torte it make sure you freeze it for an hour to firm it or else it will crumble.
